Jennifer Mimkha is a Registered Dietitian Nutritionist who specializes in plant-based nutrition and food sensitivities.
She completed her Bachelor's and Master's degrees in Philadelphia, PA before going on to complete a rigorous dietetic internship at Yale-New Haven Hospital in New Haven, CT.

Jennifer has a deep passion for healthy living and strong appreciation for the fundamental role that food plays in a healthy lifestyle. In her class, she will use that experience and passion to instruct you how to make tasty and healthy meals.

Sweet Potato Mac and Cheese
Instructions:
  • Preheat oven to 425°F. In a large pot cook macaroni according to package directions; drain. Transfer macaroni to a large bowl.
  • Meanwhile, in a medium saucepan cook sweet potato, covered, in enough boiling water to cover 8 to 10 minutes or until tender; drain.
  • For sauce, in a blender or food processor combine sweet potato and onion. Cover and blend or process until smooth, adding enough of the milk to reach a creamy consistency. Add yeast, garlic, nutmeg, and rosemary. Cover and blend or process just until combined. Season with salt and pepper.
  • Pour sauce over cooked macaroni; stir to coat. Transfer to a 2-qt. square baking dish. Bake 15 minutes or until top starts to brown.
Ingredients:
  • 1 14-ounce package dried whole grain macaroni
  • 1 large sweet potato (12 ounces), peeled and chopped
  • 1 cup chopped onion
  • ½ cup unsweetened plant-based milk, such as almond, soy, coconut, or rice
  • ½ cup nutritional yeast
  • 2 cloves garlic, minced
  • ½ teaspoon grated whole nutmeg
  • ½ teaspoon dried rosemary, crushed
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
Outrageously Healthy Brownies
Instructions:
  • Preheat the oven to 350°F. Line an 8- or 9-inch round cake pan with parchment paper (or use a silicone cake pan).
  • Combine the beans, date syrup, and cocoa powder in a food processor; process just until smooth. Add the oats, baking powder, and baking soda; process just until combined.
  • Spread batter into the prepared cake pan. Sprinkle with pistachios and chocolate pieces (if using). Bake for 35 minutes. Cool on a wire rack. Cut into wedges.
Ingredients:
  • 1 (15-ounce) can no-salt-added black beans, drained and rinsed (or 1½ cups cooked)
  • 1 cup pure date syrup
  • ½ cup unsweetened cocoa powder
  • ¾ cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Unsalted pistachio nuts, finely chopped (optional)
  • Vegan semisweet chocolate pieces (optional)

Prana Nutrition's name comes from the word "Prana" meaning life force or energy, and Nutrition, the science of interpreting the interaction of nutrients and their relationship to growth, health, and disease. The company combines the scientific approach with the soulful connection to mind and body, and they strive to help clients live their healthiest lives. Prana Nutrition was founded with the goal to help people understand how beneficial a plant-based lifestyle can be for every person's mind, body, and spirit.

Yoga is not just an amazing workout for me; it's a spiritual and artistic practice. Yoga offers a deeper connection to myself as well as those around me. I started practicing physical asana postures three years after meditating almost daily. When I finally started incorporating the physical practice of yoga I gained a greater appreciation of my body and what it's capable of. I danced for ~15 years and while dance will always be close to my heart, yoga continues to permeate my life in every way possible. Yoga is an opportunity to open ourselves to improvement and new ideas. Through my practice, I'm reminded to live, work, and communicate authentically. Most importantly, yoga reminds me how important it is to balance all of my work with play! Everything is constantly changing and we're meant to enjoy this life fully!

My work is fueled by a deep desire to help people heal themselves using food and mindfulness practices like yoga and meditation.

Jennifer is a Certified Plant-Based Cook, a Certified Lactation Counselor, Certified Lifestyle Eating And Performance (LEAP) dietitian, and a Registered Yoga Teacher. She recently moved back to Philadelphia after spending several years in sunny Florida, and is excited to be working with all her clients.
